The grapes are softly pressed and cold-settled before a 30-day alcoholic fermentation. The wine is bottled after seven months for secondary fermentation from residual sugars. It then spends a minimum of 96 months on the lees in bottle before disgorgement and is sealed with a natural cork closure.<\/p>\n<h3>Tasting note<\/h3>\n<p>Intense straw yellow with golden highlights. Broad, delicate aromas of crusty bread, yeast, honey and dried fruit.
